Thai Green Curry Vegetable

Thai Green Curry is a spicy stew full of vegetables.An authentic Thai Green Curry Recipe for the vegetarian palate. Though I am missing on -lemongrass,galangal, coconut milk – without the meat, but with meat substitutes – wheat gluten or tofu, take your pick.
This green curry is the best thing I made in my life. Just boiling the vegetables and mixing it with the Green Curry Paste was the easiest way to make supper Delicious. Not more than 20 minutes,dish prepared with super yummy taste one could ever tasted. The best combo is to have with simple plain white Basmati Rice.

Until now, I was trying to reinventing the normal subjis we have in India, But to try different with Cuisine was so much fun. If you are looking for original recipe, then UK,Rasoi. Its usually some north indian dish with a twist in a recipe, but thanks to UK,Rasoi and Me for inspiring me to try this Green Curry. But with a little alteration in the recipe, I have made delicious thai green curry with the Method posted Below.

Thai Green Curry with Vegetables

Thai Green Curry

Ingredients for the Green Paste:

1 cup Spinach
2 Cups Coriander Leaves
Ginger- a little Piece
Garlic- 3
Green Chillies – 3
Lemon juice- 2 tsp
Turmeric – 1/2 tsp
Coriander – 1tsp
Sugar- 1tsp
Coconut Milk – 1/2 cup- 3/4 cup
Water as needed

Vegetables to boil:
Brocolli,Beans,Carrot,Red Pepper,Yellow Pepper,Orange Pepper,Peas

Method:

1) Split Beans and Carrot and place it in Cooker for a whistle.
2) While Fry Red ,Yellow,Orange Pepper ,Brocolli in Tawa .
3)Meanwhile grind the ingredients for Green Paste and keep it ready.
4) Once the vegetables are cooked thoroughly, in a separate Pan, with Oil, add the paste and fry for 5 to 10 minutes.
5) Add the vegetables and let them cook in the green curry for about 5 minutes.
6) Add the coconut Milk and boil for about 10 minutes.

Note: The storebought coconut milk is fine. Since mine was little thick, I had to add water to 1/2 cup was sufficient enough to taste. Also, for Spinach, I bought from Sams club. If you are going to use fresh spinach, you should wash it for three for four times and add it in the mixer. No need to cook the fresh spinach.
