Eggless Tiramisu
How many of us went to Olive Garden just to have Tiramisu for Dessert? I have …a lot more times and was craving for Tiramisu for almost every weekend. I couldn’t wait to dig in ..even that includes not sharing with anyone. I was desperate to make this home but couldn’t find an exact recipe for this. Was in a dilemma ,to include eggs or not? Because, this cake/ice cream doesn’t include any baking or cooking.I didn’t like the idea of having Raw Eggs ,eventhough, din’t really mind them while having at Olive Garden. While I was came across lots of Tiramisu -with Egg or Eggless version on Facebook Food Blogging pages, inspired me to make one at home, without eggs.

Reviewing lots of recipes in google and youtube, came across an american lady who demonstrated how to make one without eggs. Went ahead and started gathering ingredients in the shop. But, still couldn’t find the main hero of the Tiramisu, that is, Lady Finger Biscuits anywhere else, got one atlast in Meijer ,Italian section. Thanks to the perseverance,and determination in not giving up while searching for 2 hours.

The recipe includes Amaretto Liquor /Almond Liquor. But since I am making Eggless version, I din’t even include the Liquor.Without the Liquor, it tasted delicious.

Ingredients:

Lady Finger Biscuit/Saviordi- 1- 2 pack ( consisting of 20-30 fingers)
Mascarpone Cheese – 2 (Kept at room temperature)
Heavy Whipping – Half Pint
Sugar-1/4 cup + 1/4 cup
Vanilla essence – 1 tsp
Instant coffee – 3 tsps
Warm Water – to make coffee
Hershey’s Coco Powder- To sprinkle

Method :

Get the following things ready before arranging for Tiramisu:

    1. For Heavy Whipping cream:– In a bowl with heavy whipping cream, add 1/4 cup of sugar ,Vanilla Essence and whisk for about 5 -6 minutes till you find it like creamy soft.
    2. Add 1 cup warm water to the 3 tsps of Coffee Powder and two table spoons of Sugar and keep it ready in a bowl. Adding of sugar is to avoid the bitter taste of coffee.I added Instant Capucchino. If you like Mocha or Expresso, you can make coffee using them.
    3.Keep a rectangular box or any shape box you like to assemble the tiramisu, ready.
    4. In an another bowl, put the mascarpone cheese (2) and start adding half Whipping cream – Point no.1 and start folding it.Do NOT mix it together. You have to fold it carefully. Folding:- Start from the centre point and mix it around just like the circle and continue the process till you find it smooth.Add 1/4 tsps of Sugar in to this.You can either add directly or you can make it powdered sugar and add to it. Fold another half with the mixture.Keep it ready.
    5. We will start assembling the tiramisu.
    5.1 Soak each Lady finger biscuit in the cold coffee completely and not more than 2 seconds and arrange it in the bowl which you have kept ready for tiramisu.
    5.2 Next layer- Apply the Point No: 4, that is, combination of Mascarpone Cheese and Heavy Whipping cream and layer it fully.
    5.3 Next Layer- Sprinkle Cocoa Powder using Small colander on top of the cheese.
    5.4 Do the 5.1 step again
    5.5 Then, 5.2 step
    5.6 At last you Sprinkle ,Cocoa Powder on top of the Cheese.

Keep Refrigerated for 5 hours minimum and Enjoy the decadent tiramisu with your family and friends.

Star Bugs Pops Recipe

Its officially summer and a special occasion to make anything icy or cold. During this season, freezer session can be better used for Ice creams or Popsicle.Coming across the Giada at Home Show in Food channel,saw her making a Lady Bug Pops and inspired to make one for my daughter. Its my daughter’s personal request and desire to have one. So with a helping hand from her, got all the ingredients for the Pops. Initially, was skeptical to make one because of the fact, whether she likes it or not,but just went ahead with the preparation. The whole method took me just 10 minutes and just puree them. It was not too much of calories and not even a bit of sugar is added to it. That’s the best part of it. Lolli Pop without sugar …And I can give her this Pop without any restriction to have them.

Still in a dilemma, went to walmart and purchased all the items except for the Ice Cube tray which was the essential thing in this recipe. Got one in the dollar shop.Finally ,it was prepared without any hesitation.

Star Lolli Pop
Ingredients
1 pound medium strawberries, hulled and quartered (about 4 cups)
1/4 cup fresh orange juice
2 tablespoons honey
1 cup blueberries(4 ounces)
Special equipment: 1 to 2 ice cube trays, lollipop sticks

Method:

In a blender, puree the strawberries, orange juice, and honey together until smooth.If you want , you can add 2 tsp of Sugar,Which I did.

Pour the mixture into an ice cube tray. Place the blueberries in each ice cube cup. Freeze for 1 hour. Insert a lollipop stick into each cup and freeze another 4 to 5 hours until firm. Twist the ice cube trays to remove the ice pops and serve.

Fenugreek Dosai/ Vendaya Dosai

Still couldn’t stop celebrating the arrival of the Grinder, was desperate to try Vendaya Dosai. Methi seeds/Vendayam by itself has self medicinal properties ,basically used to reduce the heat in the body.Pathhi Veidiyam, as the name says “grandma medicines” , these seeds have been used for a long time for both hair and body. Proven to be healthy and delicious when used in cooking too. Fenugreek has got sour taste to it and can be used in little quantity.Also,studies have proven that these Methi/Fenugreek seeds help bring down blood glucose level.Trust the good old green leafies to come to the rescue.Methi seeds may be small in size, but cures, constipation also.It purifies the blood hence this cures of many diseases caused by blood and skin related problems.

Common way to take methi seeds is to take 1 tsp of methi seeds along with water or buttermilk if you are south indian. What if mixed with Idly rice and Ural dal, makes a wonderful “Vendaya Dosai”. This dosai tastes better if you have a Ultra/Premier or any grinder than Mixie. But, still you can try this in Indian mixie if you don’t have grinder.

Recipe:

Ingredients:-

Idly Rice – 2cups

Normal Rice/Plain Rice- 1 cup

Urad Dal- Handful

Fenugreek/Methi seeds- 4 Tbs(Table spoon)

Salt

Method:

  • Wash and Soak Idly Rice,Urad Dal, Normal Plain Rice for about 4 hours in a separate vessel.
  • Separately soak the Fenugreek/Methi seeds in a small vessel and make sure you don’t thro’  away the water.
  • After soaking for four hours, just drain the water from the Rice,Urad Dal,Idly rice and Methi seeds along with the water, put it in grinder for about 30 minutes, with interval of adding water.
  • Take it out and add the salt,mix it well.

Since I am staying in a cold Indianapolis , I used to preheat the oven for 5 minutes,switch off and place the batter inside it for about 10-12 hours.

The job has not done over yet. While making dosai, you have make it like a pancake or uthapam and while doing so, just close it with lid or glass so that it cooks of evenly.

Thai Green Curry Vegetable

Thai Green Curry is a spicy stew full of vegetables.An authentic Thai Green Curry Recipe for the vegetarian palate. Though I am missing on -lemongrass,galangal, coconut milk – without the meat, but with meat substitutes – wheat gluten or tofu, take your pick.
This green curry is the best thing I made in my life. Just boiling the vegetables and mixing it with the Green Curry Paste was the easiest way to make supper Delicious. Not more than 20 minutes,dish prepared with super yummy taste one could ever tasted. The best combo is to have with simple plain white Basmati Rice.

Until now, I was trying to reinventing the normal subjis we have in India, But to try different with Cuisine was so much fun. If you are looking for original recipe, then UK,Rasoi. Its usually some north indian dish with a twist in a recipe, but thanks to UK,Rasoi and Me for inspiring me to try this Green Curry. But with a little alteration in the recipe, I have made delicious thai green curry with the Method posted Below.

Thai Green Curry with Vegetables

Thai Green Curry

Ingredients for the Green Paste:

1 cup Spinach
2 Cups Coriander Leaves
Ginger- a little Piece
Garlic- 3
Green Chillies – 3
Lemon juice- 2 tsp
Turmeric – 1/2 tsp
Coriander – 1tsp
Sugar- 1tsp
Coconut Milk – 1/2 cup- 3/4 cup
Water as needed

Vegetables to boil:
Brocolli,Beans,Carrot,Red Pepper,Yellow Pepper,Orange Pepper,Peas

Method:

1) Split Beans and Carrot and place it in Cooker for a whistle.
2) While Fry Red ,Yellow,Orange Pepper ,Brocolli in Tawa .
3)Meanwhile grind the ingredients for Green Paste and keep it ready.
4) Once the vegetables are cooked thoroughly, in a separate Pan, with Oil, add the paste and fry for 5 to 10 minutes.
5) Add the vegetables and let them cook in the green curry for about 5 minutes.
6) Add the coconut Milk and boil for about 10 minutes.

Note: The storebought coconut milk is fine. Since mine was little thick, I had to add water to 1/2 cup was sufficient enough to taste. Also, for Spinach, I bought from Sams club. If you are going to use fresh spinach, you should wash it for three for four times and add it in the mixer. No need to cook the fresh spinach.

Chennai Styled Tiffin Sambar

Sambar is always traditional and special dish in south india,especially in TamilNadu. Different flavour compete against each other but nothing can beat the Sambar from Tamilnadu,specifically Chennai. Madras Sambar,as the name goes is available around the season and its best tasted when cooked Toor Dal is used. The blend of spices such as Channa Dal,Coriander Seeds,Long Red Chilies make it more flavor full than the ones used without.

Celebrating the occasion of the newly bought Grinder,I made delicious Sambar to go along with Idly.

Recipe:

Ingredients:

    Toor Dal- 1/2 cup (Cooked and Mashed in the cooker )
    Tamarind- Size of a lemon(Soak in Warm water and extract the pulp from that)
    Vegetables:
    Onion- 1 chopped
    Tomato(s)- 1 or 2 chopped
    Sambar Powder- 1.5 tsp
    Curry Leaves and Coriander Leaves
    Salt and Oil as needed

Tadka:
Mustard Seeds- 1tsp
Long Red Chillies- 1

    Fry and Grind:
    Channa Dal – 1tsp
    Dania/Coriander Seeds- 1 tsp
    Long Red Chillies – 2
    Pepper- 3-4
    Ginger – Small piece

Method:

1) Fry and Grind the above stuff and make paste like.
2) In a kadai with Oil, Fry Onion for few minutes and add Tomatoes. After a while add the tamarind pulp with Sambar Powder with salt.
3) Once it has been boiled for about 10-15 minutes, add the grind paste with cooked dal.
4)Boil for few more minutes, and do the tadka.
Garnish with Coriander and Curry leaves
